Learning Session: The Experiment Restaurant Pop-Up: Enhancing Efficiency, Quality, and Customer Value in Restaurant Kitchens

In 2024 during two months, the lean institute in Barcelona constructed and run an experimental restaurant using lean principles in the most pure version. This presentation examines how lean methodologies can revolutionize restaurant kitchens by minimizing waste, optimizing workflows, and enhancing transparency, while maintaining customer satisfaction and reducing costs. Key insights include the application of JIT (Just-In-Time) practices, open kitchen concepts, and innovative solutions like Kanban systems for seamless operations. The learnings obtained can be appled to any other industry.

This research explores critical inefficiencies in the actual hospitality and restaurant industry. It questions conventional practices such as mass production, big-batch processing, and reliance on pre-cooked items, which disrupt operational flow and diminish customer value. The experiment also examines the physical and experiential disconnect between kitchen operations and customers. At the end of this session, attendees will be able to rethink restaurant workflows, customer engagement, and value creation. As well as understand the importance of the continuous flow, small lot size, pull systems, continuous improvement, customer experience and D4C (Design for customer).

Keynote: Managing on Purpose: Using Hoshin Kanri to Develop Strategy, Align Teams, Grow Leaders, and Innovate the Enterprise

Using Hoshin Kanri, Mark Reich explains how organisations can effectively develop strategy, align teams, grow leaders, and innovate. While most organisations have plans, they often fall short in execution due to three challenges:

1.Defining Strategy: Crafting a realistic strategy that considers internal and external factors requires rigorous engagement across all levels, which often leads to misalignment.

2.Executing Strategy: Even with a sound direction, organisations lack repeatable systems to engage teams and ensure progress toward objectives.

3.Adapting Strategy: Organisations struggle to adjust plans when unexpected challenges arise, lacking systems to pivot effectively.

Hoshin Kanri, a system widely adopted by Toyota, addresses these issues by aligning every part of an organisation toward a shared direction, enabling proactive engagement and adaptability.

In Managing on Purpose, Reich shares proven Hoshin Kanri practices from his experiences at Toyota and as Chief Engineer, Strategy, at the Lean Enterprise Institute. Through detailed case studies, readers will learn how to, develop and align strategy annually, engage teams through top-down and bottom-up collaboration and build systems for tracking progress and solving problems in real time.

This workbook is an essential guide for leaders looking to set direction, achieve goals, and engage teams for long-term success. The workbook will be available to purchase at our UK Lean Summit 2025.

Mark Reich - Chief Engineer, Strategy, Lean Enterprise Institute
